Babiš’s New Luxury French Restaurant Opens In Průhonice Tomorrow

The Czech Republic’s Prime Minister-designate and headline fixture Andrej Babiš, will open a new luxury hotel and French restaurant in Prague’s Průhonice district tomorrow.

The restaurant is a sibling to Paloma, the former finance minister and ANO party founder’s Michelin-starred venture on France’s Cote d’Azur.

Paloma Průhonice is helmed by chef Nicolas Decherchi, whose southern French cuisine gave the original Paloma in Mougins, near Cannes, its two Michelin stars.

The restaurant, part of a boutique hotel and bakery two years in the making will be, according to the Paloma site, fully operational from Tuesday, November 14.

The menu appears to be characterized by the same inventive amuse bouche, including a signature foie gras in candy floss, and seafood dishes that have given Paloma its international reputation.

Prix-fixe dinner menus range from 2,650 CZK-4,900 CZK and include South Western duck liver Foie Gras Belle Hélène, Breton Lobster Marinière, Pear Williams soufflé, and Roe Deer with “Grand Veneur” sauce. The restaurant also serves a lunch menu starting at 1,590 CZK.

The on-site confectionery promises fresh bread, baguettes, brioches, butter croissants, pain au chocolat, and a daily menu of French quiche as well as an e-shop for take-away orders.

Nearby Sokolovna, another upscale neighborhood eatery, also belongs to the Babiš family; the new Paloma interior was designed by Monika Babišová, the politician’s wife.

While the original Paloma’s views of the French Riviera will be replaced by views of UNESCO-gem Průhonice Chateau, we wonder how its legacy of exquisite service and seafood dishes will play out in landlocked Czechia?
