Elderflower lemonade is a popular thirst quencher in the Czech Republic with every villager worth his or her salt owning a secret recipe for the sweet cordial that infuses this addictive beverage.

4 large cuttings of elderberry blossom
2 eggs
Pinch baking powder
2 tbsp milk
3 tbsp flour
Oil, for frying
Powdered sugar or cinnamon sugar, for dusting
Instructions
Combine eggs, milk, flour, and baking powder. Beat the batter as you would for crepes. Clean flowers and then soak in the finished mixture, holding them by the stem to coat.
In a pan, heat a large quantity of oil and fry the flowers about three minutes until golden brown. Place them on paper towels to remove excess oil.
Serve dusted with powdered sugar or sugar and cinnamon. For a savory alternative, sprinkle fried flowers with Parmesan cheese and serve with garlic dip.
