Opened in April, this self-service canteen and butcher shop brings a much-needed casual dining option to Wenceslas Square

Opening in early April in the Art Noveau Ringhoffer Palace building on Prague’s Politických vězňů street, Kantýna is the latest venture by the Ambiente group to promise craft butchery, self-service beef brisket and burgers, and beer all under one spectacularly designed roof.

Chefs, waiters, and butchers are on loan from Čestr, the popular Prague steakhouse which closed down for renovations earlier this year.

The restaurant is divided into a butcher’s shop where guests can select cutlets and sausages to make at home, and a restaurant where you can have your meat cooked on the spot.

The central part of the dining area is a self-service canteen dominated by a massive marble table.

The new interior of Kantýna, a former bank and Masonic mansion, was designed by architect Rudolf Netík; along with the white-coat waitstaff uniforms, inspired by the Bohumil Hrabal novel I Served the King of England, it is meant to evoke the glamorous pre-war hotels of Wenceslas Square.

Beef and pork are sourced by Amaso, certified breeders of Czech Přeštice pig and piebald cattle.

In an interesting deviation from the Prague restaurant norm, reservations are not accepted.
