Texas BBQ Burger with Onion Rings by Restaurant Jáma

“I think that people here know more and more about American cuisine, and a growing number are aware of the difference between a fast food burger and a proper one made from good beef. This is good,” says Max Munson, the owner of Jáma Steakhouse and Restaurant Jáma.

200 g  ground beef
5 g of black pepper
15 g of salt
50 g of oil
100 g of BBQ sauce
liquid smoke
50 g of honey
5 g of chili
5 g of coriander (cilantro)
10 g of garlic
a hamburger bun
50 g of lettuce
50 g of tomatoes
20 g red onion

Shape the ground beef into a hamburger (at least 1 cm tall), salt, pepper and bake quickly on a hot grill. After 4 minutes, turn the hamburger over and repeat the same for 4 minutes on the other side. Before completing this, cover the meat in BBQ sauce, let it char a little bit, then spread the BBQ sauce over it again and place on the grill for a little bit longer. In the meantime, prepare the hamburger bun, which you should grill a little bit, and then place cut-up lettuce and tomatoes. The BBQ sauce will caramelize when on the grill, and then the hamburger is done. Add onion rings, and on the side, fries or baked potatoes.

Hot Brownie with Chocolate, Vanilla Ice Cream, and Decorated with Fresh Mint by Jáma Steakhouse

500 g of cooking chocolate
250 g of butter
650 g of sugar
8 eggs
250 g of flour
50 g of cocoa
salt
1 package (13 g) of baking powder
vanilla ice cream
mint

Heat up the chocolate with butter, mix eggs with sugar separately, and after whipping, add a pinch of salt. Add the cocoa and melted butter with chocolate, mix together and at the end, add a bit of flour as well as baking powder. Before adding the mix to a pre-greased baking pan, throw in pieces of chocolate. Bake in the oven at 180 Celsius for 25 minutes, and then at 165 Celsius for another 25 minutes. Let it cool down and slice into small cubes. Serve with vanilla ice cream and decorate with fresh mint.

Jack Daniel’s Burger with Jack Daniel’s Sauce, Melted Monterey Jack Cheese, and Crispy Bacon by T.G.I. Friday’s

800 g of ground beef (max. 20% fat)
8 slices of bacon
8 slices of cheddar cheese
½ a head of lettuce
2 tomatoes
2 pickles, sliced
1 chopped red onion
4 hamburger buns
Jack Daniel’s sauce
Salt

Divide the ground meat into four portions, and prepare into the right shape thoroughly to ensure that the meat connects well: we will create hamburgers about 12 cm wide and 1 cm tall. Cut the lettuce into thin slices, and cut the tomatoes, pickles and onion into thin slices. Salt both sides of the hamburger and bake quickly on a hot grill, twisting by 45° to create a distinct checkered pattern. Grill until a red-coloured sauce forms on the surface. Then, flip it over and repeat the same process on the other side. In the meantime, fry the bacon. Cut the hamburger bun and bake from the inside very briefly. On the hamburger, place cheese until it melts. On the bottom of the bun, place lettuce, tomatoes, pickles, and onions. Then place the hamburger on top of the bun, add bacon, glaze with Jack Daniel’s sauce, and then finish with the top half of the bun. Serve with fries.
