Ricotta Pie by Radka
“I found this recipe in a cookbook a long time ago and I remember I was wondering what does this “ricotta” taste like. I went to the shop, surprisingly found it there (the brand Italat is available in most supermarkets for approximately 30CZK per 250g), and bought it for the first time. Ricotta pie has been one of my favorite dishes since then. I like the Italian style – easy to prepare but when you use fresh ingredients, the taste is simply perfect.”
Preparation: 20 minutes, Baking: 35 minutes
- 50 g of grated parmesan
- 300 g cherry tomatoes
- 1 tablespoon of extra virgin olive oil
- 1 clove of garlic
- salt and pepper to taste
- 4 eggs
- 500 g of ricotta cheese
- 200 ml sour cream
- 2 tea spoons of thyme leaves
- baguettes
1. Preheat oven to 180 ˚C. In a medium baking bowl perforate the cherry tomatoes with a fork (they will bake faster) and add a spoon of olive oil and little bit of salt. Bake for about 10 minutes and then add a chopped clove of garlic and bake for another 5 minutes.
2. Mix ricotta with eggs, salt and half of the thyme (ideally with kitchen mixer). Then add the sour cream and stir with a spoon.
3. Butter a larger baking bowl and spread the grated parmesan evenly. Place the mixture into the bowl, top it with baked tomatoes, rest of the thyme and freshly grounded pepper.
4. Bake for about 20 minutes until the pie is golden brown on the sides ans serve with buttered baked baguettes.
