A recipe from a Czech chef has been included in a list of top 10 recipes from around the world.
Zdeněk Pohlreich chef at Café Imperial, Next Door by Imperial, and Divinis, was chosen for inclusion in a newly released digital cookbook called “Culinary Perspectives: The Gourmet's Journey Across Cultures.”
"It's a classic Czech dish, which we try to make lighter, more visually interesting, in high quality. We don't want to be satisfied with just doing it, we work to get as close as possible to imaginary perfection.
"It's a great honor, I'm usually proud of it. I love the feeling when you're part of something great, that touch of almost perfection is incredibly uplifting.”
Pohlreich not only cooks but has appeared on a number of Czech television shows such as Ano, šéfe! (Yes, chef!), Ted’ varí šéf! (Now It’s The Chef’sTurn To Cook!) and Superšéf: 24 hodin do pekla a zpet (Superchef: 24-hours To Hell And Back Again).
Lexus had help from writer and editor Joshua David Stein, whose work has appeared in the Best American Food Writing and a former restaurant critic for the Village Voice and New York Observer.
Pohlreich called the recipe one of his favorites Czech dishes, a close second to kulajda with a poached egg. "We have had it on the Café Imperial menu for 13 years. It's a regular in the best sense of the word," he said.
The café may currently be closed but fans of the famed Prague culinary institution can order a lunchtime chef's box for delivery.
